Anyone who handles food or employs food handlers has legal obligations to ensure food is properly stored, prepared, cooked, served or sold.

While this course provides a high-level introduction to some of the most important food safety topics, it is tailored specifically for employees and employers who work in the catering industry – and especially those new to handling food.

Level 1 Food Safety – Catering: what is covered?

Students start the course with a broad look at food hygiene legislation.

This includes the Food Safety Act 1990, as well as the consequences of failing to comply with the law.

Both employers and employees will finish the first module with a key understanding of their legal responsibilities.

Next, a detailed look at potential hazards – including physical, biological, allergenic and chemical hazards – will alert students to how food can become contaminated.

Cleanliness is the focus of the third module, with detailed advice on how to prevent food contamination from a number of different sources.

This section also includes teaching on tidying, washing up properly and cleaning work surfaces to an appropriate level.

Personal hygiene, including hand washing techniques, is also covered.

The final module looks at the potential impact of pests: where they are most likely to be found, what encourages them, what risks they pose, and how they can be adequately controlled to ensure maximum food hygiene standards at all possible times.

How long will it take to complete this course and how will I be assessed?

At under one hour, this 100% online training programme is short and highly achievable. A typical student completes the course in just 50 minutes.

There are four modules within the course. Each module finishes with a multiple choice test.

Any student wishing to receive their certificate of achievement must score at least 75% in all four multiple choice tests.

This course is recognised and approved by the Royal Society for the Prevention of Accidents (RoSPA) and the Continuous Professional Development (CPD) Certification Service.
